Easy Pesto Tilapia

6 frozen tilapia fillets
1/2 cup grated Parmesan
2 cups pesto sauce, (I love Costco's pesto)

Set the oven on broil (high) before prepping tilapia.
Line a jelly roll pan with tin foil and spray with non-stick cooking spray.
Completely defrost tilapia fillets, and pat dry with a paper towel. Lay a few inches apart on the prepared pan. Sprinkle 2 TB of parmesan on top of each fillet. 
Broil the tilapia for 3-5 minutes, until the cheese is bubbling and light brown. Ladle 1/3 cup of pesto on each fillet and sprinkle a little bit more cheese on top. Broil 3-5 minutes more, or until tilapia is cooked through.
You can top the tilapia with diced tomatos, but they aren't necesarry.
Serve with asparagus and rice pilaf.

I want to try cooking freshed diced tomatoes on top, adding them at the same time as the pesto, but I haven't tried it yet.

  1. I finally tried cooking fresh cut tomatoes on top and it was to die for! I added them right after I added the pesto.
