Honey Garlic Chicken

3 large chicken breasts, cubed
salt and pepper
3/4 cup chicken broth
5-7 garlic cloves (depending on size), minced
2 1/2 TB honey
2 1/2 TB soy sauce
1 TB cornstarch
1/4 tsp crushed red pepper flakes
1 TB olive oil
rice (I like Jasmine rice)

Start rice cooking first so it's nice and hot when the chicken is ready.
Season cubed chicken with salt and pepper.
Whisk chicken broth, garlic, honey, soy sauce, cornstarch and red pepper flakes together and set aside.
In a large skillet, warm olive oil over medium heat until very hot. Add chicken and let cook for 1-2 minutes without stirring, allowing the chicken to cook on one side. Flip once and allow to cook for 1 more minute.
Whisk the sauce to recombine, especially the cornstarch (it tends to sink to the bottom). Add to the skillet with the chicken, stirring to combine. Bring to a gentle boil, simmering until sauce thickens and chicken cooks through (3-4 minutes). Add salt and pepper to taste.
Serve over hot rice.
