Chocolate Chip Pumpkin-Gingerbread Loaf

1/2 cup coconut oil
1/2 cup applesauce
1 1/2 cups sugar
4 eggs
2 cups white flour
1 cup whole wheat flour
2 tsp baking soda
1/2 tsp baking powder
1 1/2 tsp salt
1 tsp cinnamon
1 tsp nutmeg
4 tsp ginger
1/2 tsp clove
2/3 cup water
2 cups canned pumpkin
1 cup chopped pecans (optional)
1 cup chocolate chips (optional)

1. Melt coconut oil and set aside, cooling until it's at room temperature.
2. While waiting for the coconut oil to cool, combine all dry ingredients in a large mixing bowl.
3. In a small bowl, cream together coconut oil, applesauce, sugar, and eggs.
4. Combine with the dry ingredients, gradually adding water and pumpkin.
5. Beat until well combined, adding nuts and chocolate chips when mixed well.
6. Pour into 3 well-greased loaf pans or 6 small pans.
7. Bake at 350 degrees for 55-60 minutes, or until a toothpick comes out clean. Let the bread sit for 5 minutes, then remove from pan and cool on wire rack.
